Chef Orlando grew up around the flavors & aromas of his abuela’s cooking. Her dishes inspired him to pursue the culinary arts. After working in Los Angeles, California and the Triangle Area of North Carolina, he decided to launch “La República Food Truck”. He learned many techniques from famous chefs from all over the world and this encouraged him to created to his own signature cooking style.
Paying homage to his abuela and his Oaxacan roots, Chef Orlando takes on a modern approach to Mexican cuisine. His dishes are a heartfelt fusion with Mexican roots.
