Ingredients
  

  • 1 lb Peeled shrimp
  • 2 tsp Lemon juice
  • 1/2 cup Extra virgin olive oil
  • 4 pcs Red onions sliced
  • 1 pcs Large potato diced
  • 1/2 cup Dry white wine
  • Cup of shrimp broth
  • 1 3/4 Chicken broth or vegetable broth
  • Sea salt
  • Chopped cilantro

Instructions
 

  • Mix lemon juice together in a medium bowl. Add shrimp and toss to coat shrimp well. Cover and set aside while you make the soup.
  • Heat the oil in a saucepan add the chopped onions cook for 2-3 minutes or until they start to soften. Add the potato. Sprinkle with salt and sauté until they also start to soften, about 5 minutes.
  • Add the white wine and cook until it has reduced to a syrupy consistency. Add the chicken and shrimp broths and season to taste, Bring to a boil, then lower the flame to medium low and simmer for 5 minutes. Until the potatoes are soft. 
  • When soup is boiling , turn heat to medium low and add shrimp. Cook until shrimp turn pink and turn off. Ready to serve add chopped coriander on top
